Pasta with chicken in sour cream sauce with zucchini and pumpkin seed oil
- 1 zucchini
- 500g chicken fillets
- 2 cloves of garlic
- 3 tablespoons olive oil
- 2 tablespoons štajersko prekmursko pumpkin seed oil
- 200ml double cream
- 2 teaspoons salt
- 300g pasta
1.Wash chicken fillets and cut them into smaller pieces.
2.Cut the zucchini into squares, chop the onion.
3.Heat the olive oil in a pan, add zucchini squares and onion and fry for about 20 minutes. Stir every few minutes.
4.Meanwhile, bring 1 litre of water to boil. Stir in pasta and follow the cooking time on the package. Strain the water, run fresh, cold water over it and leave the pasta in the pot.
5.After 20 minutes of frying zucchini and onion, add the meat. Stir constantly while frying for 5 minutes. Cover the pan and simmer for another 15 minutes. Remove the cover and simmer for another 5 minutes until the water released from the zucchini evaporates.
6.Add sour cream to the zucchini and chicken meat, sprinkle with salt and stir it for a few minutes.
7.Remove from heat and add the cooked pasta.
8.Serve the pasta sprinkled with a few tablespoons of pumpkin seed oil.
