
Cucumber rolls with pumpkin seed oil

Ingredients:
- 2-3 large cucumbers
- cream cheese (Philadelphia)
- 1 tbsp Kocbek Štajersko prekmursko pumpkin seed oil Slovenia
- fresh chive
- 30 g chopped pumpkin seeds
- salami – chicken breast
- decorative long toothpicks
- paper towels
Instructions:
- Cut the cucumbers into long, thin slices using a paring knife, and place them on a hard surface, overlapping each slice slightly by about 1 cm. Once arranged, gently pat them dry with a paper towel.
- In a small bowl, mix the cream cheese spread with pumpkin seed oil, then spread it over the cucumber slices and sprinkle them with fresh chopped chives for freshness.
- Layer thinly sliced chicken breast (salami) evenly over the cucumbers.
- Sprinkle with ground salted pumpkin seeds.
- Roll the cucumber slices in the opposite direction from how they were laid to form a long roulade.
- Secure the roulade with long toothpicks and cut it into 2 cm thick pieces.
- Arrange the rolls on a plate, drizzle them with pumpkin seed oil, and sprinkle with pumpkin seeds.
