Fresh cheese with pumpkin seeds

Ingredients:

  • fresh cow’s-milk cheese,
  • few tbsp pumpkin seed oil,
  • salt to taste,
  • ground pumpkin seeds,
  • pumpkin seed oil,
  • dried tomatoes.

Procedure:

1. Slicing: Cut the cheese into pieces of any size and place them on a serving plate. 

2. Sesoning: Season with salt to taste, drizzle with pumpkin seed oil, and add the sun-dried tomatoes. 

3. The Topping: If desired, sprinkle with ground pumpkin seeds for extra texture.

Tip: If you want to turn this simple snack into a gourmet appetizer, use these professional plating techniques: 

Cheese Shapes: Instead of simple cubes, use two warm spoons to shape the cheese into elegant quenelles (oval scoops), or roll the cheese into small balls and coat them entirely in the ground pumpkin seeds for a "truffle" look. 

The "drip" Art: Instead of a simple drizzle, use a pipette or a small spoon to create precise dots of dark green pumpkin oil around the white cheese to create a high-contrast visual on a white plate.

Štajersko Prekmursko Pumpkin Oil with Protected Geographical Indication (PGI) is an edible unrefined oil produced by pressing roasted pumpkin seeds, which are extracted from pumpkins (Cucurbita pepo) and processed in the region of Štajerska and Prekmurje. It is dark green to red in colour, with a characteristic aromatic smell and taste.
