Ravioli on a bed of butternut squash with pumpkin seed oil

Procedure:

  1. Cook the ravioli according to the instructions on the packaging. Once cooked, drain them.
  2. Cut the sliced sun-dried tomatoes and garlic cloves.
  3. Heat the pumpkin oil in a pan, add the garlic and, after a minute or so, the sun-dried tomatoes. When the tomatoes have softened, add the sliced cherry tomatoes. Immediately afterwards (before the tomatoes release their water), add the cooked ravioli. Mix everything together.
  4. Place the bunches of butternut squash on a plate and place the cooked ravioli on top of the butternut squash.
  5. Sprinkle the prepared dish with Parmesan cheese and drizzle with pumpkin seed oil. For the icing on the cake, you can also add crushed pumpkin seeds.

Štajersko Prekmursko Pumpkin Oil with Protected Geographical Indication (PGI) is an edible unrefined oil produced by pressing roasted pumpkin seeds, which are extracted from pumpkins (Cucurbita pepo) and processed in the region of Štajerska and Prekmurje. It is dark green to red in colour, with a characteristic aromatic smell and taste.
