Tomaž also supports the story of the Kocbek oil mill, recognising the passion, tradition and effort that the family has been involved in since 1929.
The importance of family is also clear to the chef, who has found inspiration for his cooking in the dishes of his mother and nona. Gostilna Lojze is based on a long tradition and was first mentioned in 1897. Each generation has added something unique to its dishes. With all the harmonious and sophisticated flavours of the Vipava Valley, the dishes have a soul that is still felt today.
Today, Tomaž Kavčič is renowned as a poet of flavours, cooking technologies and top-quality ingredients. He loves the Vipava Valley and proudly shows it to everyone - on a plate. There is not a dish in this tavern that does not knock on the rich local tradition. Each dish is first created in his head, then boldly tested in the kitchen.

The biggest challenge is to keep it constant so that every guest always gets what they came for. This goal has become a guiding principle for everyone in our restaurant and a way of life for the culinary team”

Štajersko Prekmursko Pumpkin Oil with Protected Geographical Indication (PGI) is an edible unrefined oil produced by pressing roasted pumpkin seeds, which are extracted from pumpkins (Cucurbita pepo) and processed in the region of Štajerska and Prekmurje. It is dark green to red in colour, with a characteristic aromatic smell and taste.
