Salad of fresh asparagus and hard-boiled eggs

  • bunch of young asparagus
  • 2 hard boiled eggs
  • salt, apple cider vinegar
  • a few tablespoons of štajersko prekmursko pumpkin seed oil
  • roasted pumpkin seeds


1.Wash the asparagus and cut off any hard ends. Cut them across into about 1cm long cylinders.

2.Boil the eggs and chop finely.

3.Serve in a cup. First add the pieces of asparagus, then the pieces of eggs. Season with pumpkin seed oil, vinegar and salt and mix.
